Servings4
500 G finely chopped lamb or beef
1 large finely chopped onion
2 cloves minced garlic
1 tablespoon grated fresh ginger
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
salt
black pepper
fresh parsley
fresh cilantro
1

Gather your ingredients: 500 G of finely chopped lamb or beef, 1 large finely chopped onion, 2 cloves of minced garlic, and 1 tablespoon of grated fresh ginger.

2

In a small bowl, mix together the spices: 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground coriander, and 1/4 teaspoon cayenne pepper. Season with salt and black pepper to taste.

3

In a large bowl, combine the meat, onion, garlic, ginger, and the spice blend. Use your hands or a wooden spoon to mix everything together gently.

4

Cover the bowl with plastic wrap and let it sit in the fridge for at least 30 minutes or overnight to allow the flavors to meld.

5

If you have sausage casings, attach them to a sausage stuffer or meat grinder with a sausage attachment and carefully fill the casings with the meat mixture, packing it tightly. If no casings are available, shape the mixture into small patties or logs instead.

6

Heat a large skillet over medium-high heat and cook the merguez sausages, turning frequently until they're browned and cooked through, about 5-7 minutes per side.

7

Serve the delicious merguez hot, garnished with fresh parsley and cilantro. Pair it with couscous, bread, or a crisp salad for a complete meal.
