2 Large Onion (finely chopped)
2 Medium Tomatoes (diced)
2 Tsp Olive oil
1” Ginger
2 Green chillies (finely chopped)
1 Tsp Cumin seeds
4-5 cloves
1 Tsp Salt
½ Tsp Turmeric
1 Tsp Deggi mirch powder
½ Tsp Coriander powder
½ Cup Fresh Coriander chopped

Wash and roast aubergines on the flame.

Keep turning the aubergines and roast from all sides till skin starts to peel.

Cool and peel the skin off.

Mash the roasted aubergines using a fork.

In a pan heat olive oil or ghee.

Now add cloves and cumin seeds. Sauté.

Add chopped onions and cook till lightly brown.

Add coriander powder, turmeric, deggi mirch powder and salt. Sauté. Be careful not to burn the spices as they roast quickly.

Now add the chopped tomatoes. Mix well.

Cover and cook on medium low, stirring occasionally till tomatoes soften.

Now add the mashed roasted aubergines. Mix well.

Cook on low flame till all the flavours are well combined.

Serve hot.

Garnish with chopped fresh coriander.
