1

Poke holes in 2 large round brinjals and stuff with garlic cloves.

2

Apply a dash of oil on the brinjals.

3

Use a flame net to roast the brinjals over live flame until the outside skin is totally burnt.

4

Cover the roasted brinjals in a bowl to retain heat and moisture for easier peeling.

5

After 10 minutes, peel the burnt skin off the brinjals using water to help remove it.

6

Cut the peeled brinjals roughly, without mashing too much.

7

In a pan, add ghee and temper with dried red chili and cumin.

8

Add chopped garlic and fine chopped ginger, lightly browning the garlic.

9

Add chopped green chili and chopped onion, sautéing on high flame until the onions are slightly raw.

10

Stir in turmeric, chili powder, and salt, then add chopped tomato and cook until softened.

11

Add the roughly cut brinjal to the pan and cook for 10 minutes.

12

Before plating, add chopped coriander.
