Jackfruit dosa is a delightful variation that highlights the sweet and savory flavors of ripe jackfruit, making it a popular dish during festivals and celebrations. Instructions

  1. 1Prepare the dosa batter by soaking rice and urad dal overnight, then grinding until smooth.
  2. 2Peel and chop the ripe jackfruit into small pieces.
  3. 3Heat oil in a pan over medium heat and add mustard seeds until they splutter.
  4. 4Add chopped onions, green chilies, and ginger; sauté until onions are translucent.
  5. 5Stir in curry leaves, turmeric powder, and black pepper; cook for 1-2 minutes.
  6. 6Add the chopped jackfruit and salt; cook until the jackfruit is tender, about 5-7 minutes.
  7. 7Mash the jackfruit mixture slightly and mix in chopped coriander leaves and lemon juice; set aside.
  8. 8Heat a non-stick skillet over medium heat and grease lightly with oil.
  9. 9Pour a ladleful of dosa batter onto the skillet, spreading it into a thin circle.
  10. 10Cook until the edges lift and the bottom is golden brown, about 3-4 minutes.
  11. 11Place a spoonful of the jackfruit filling in the center of the dosa and fold it over.
  12. 12Cook for another 1-2 minutes to heat the filling through.
  13. 13Serve hot with coconut chutney or sambar.

  • 1 cup rice flour
  • 1/2 cup cooked jackfruit, mashed
  • 1/2 cup yogurt
  • 1/2 tsp salt
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • 1/4 tsp baking soda
  • 1/4 cup water (as needed)
  • 2 tbsp oil (for greasing)
  • 1/4 cup chopped coriander leaves (for garnish)

Instructions

  1. 1In a mixing bowl, combine rice flour, mashed jackfruit, yogurt, salt, turmeric powder, cumin seeds, and baking soda.
  2. 2Gradually add water to the mixture to form a smooth batter. The consistency should be similar to pancake batter.
  3. 3Cover the bowl and let the batter rest for about 30 minutes.
  4. 4Heat a paddu pan or aebleskiver pan on medium heat and grease each cavity with a little oil.
  5. 5Once the pan is hot, pour a spoonful of batter into each cavity, filling them about 3/4 full.
  6. 6Cook for about 3-4 minutes or until the bottom is golden brown.
  7. 7Carefully flip each paddu using a skewer or fork and cook the other side for another 3-4 minutes until golden brown.
  8. 8Remove the paddu from the pan and place them on a serving plate.
  9. 9Garnish with chopped coriander leaves before serving.
  10. 10Serve hot with coconut chutney or sambar.
