  • 1/2 tsp turmeric powder

  • 1/4 cup fresh coriander, chopped
  • 1/2 tsp salt
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp baking soda
  • 4 pav (Indian bread rolls)
  • Oil for deep frying

Instructions

  1. 1In a pan, heat 2 tablespoons of oil and add mustard seeds and cumin seeds. Let them splutter.
  2. 2Add the chopped green chilies and sauté for a minute.
  3. 3Mix in the turmeric powder, red chili powder, and salt. Stir well.
  4. 4Add the mashed potatoes and mix thoroughly with the spices. Cook for 2-3 minutes.
  5. 5Remove from heat and add chopped coriander and garam masala. Let the mixture cool.
  6. 6Once cooled, shape the potato mixture into small balls (about the size of a golf ball).
  7. 7In a bowl, mix chickpea flour, baking soda, and a pinch of salt with water to make a smooth batter.
