1 can (13.5 oz) coconut milk
1 cup split red lentils
1 teaspoon salt
1/2 teaspoon black pepper
1 cup brown rice
2 tablespoons lemon juice
1/4 cup cilantro, chopped
1 teaspoon garam masala
1/4 cup Greek yogurt or non-dairy yogurt
2 scallions, sliced

Chop the onion into small pieces.

Heat olive oil in a large skillet until hot but not smoking.
