Cut eggplant in long shape, ensuring they are not too thin or too big.

Cut potatoes into small pieces and wash both vegetables.

Take a pan and heat oil.

Add cumin seeds and sauté until they look brown, then add chopped onion.

Sauté until the onion becomes golden brown.

Add chopped tomato and all spices: red chili powder, turmeric powder, salt, green chili, and garam masala.

Mix all these spices very well and cook for 2 or 3 minutes.

Then add eggplant and potatoes, mixing well. Cover with a lid.

Cook for 12 to 15 minutes.

Garnish with coriander leaves.
