Moroccan Kefta Tajine with Eggs

Originating from Morocco, Kefta Tajine is a beloved dish that showcases the rich flavors of North African cuisine. Traditionally made for family gatherings, it combines spiced ground meat with eggs, symbolizing nourishment and hospitality. Today, it has found fans worldwide, often adapted with various spices and ingredients to suit local tastes.

Tofu provides protein with fewer calories, while chickpea flour is a budget-friendly alternative.
Prepare the ground meat mixture with 1 pound of ground chicken, 1/2 grated onion, 1/4 cup chopped parsley, 3 minced garlic cloves, 1 teaspoon paprika, 1/2 teaspoon cumin, 1/2 teaspoon black pepper, 1 teaspoon salt, and 1 teaspoon ginger (if using).
Make small balls with the meat mixture.
Grate 3 tomatoes and set aside.
Heat 1/2 tablespoon of olive oil in a pan over medium heat.
Add the grated onion and grated tomatoes to the pan along with the spices.
Cover the sauce and let it cook until it comes to a boil.
Once boiling, add the meatballs to the sauce.
Dilute 2 tablespoons of tomato paste in 1 cup of water and add to the meat.
Cover the pan and let the meat cook for 30 to 40 minutes on medium heat.
After 40 minutes, remove the lid and let the sauce thicken.
Transfer the meat to a flat pan and break 2 to 3 eggs over the meat.
Cover the pan and let the eggs cook until set.
Serve with bread.
