These sweet treats are often coated in sugar and enjoyed warm, symbolizing festivity and indulgence. Start by mixing 2 tablespoons of yeast with 1 cup of warm water, 1 tablespoon of sugar, and 1 tablespoon of flour; let it sit until frothy.
In a mixer, combine 1/2 cup of sugar, 10 eggs, and beat until mixed.
Add the yeast mixture, 4 cups of whole milk, and melted butter (1 cube) to the egg mixture.
In a separate bowl, mix 10 pounds of flour with 2 tablespoons of salt.
Combine the wet and dry ingredients, adjusting with water as needed for consistency.
Let the dough rest for 15 minutes, then check the consistency and adjust with more flour or water if necessary.
Cover the dough and let it rise until doubled in size, about 1 hour.
Punch down the dough and prepare for frying.
Heat canola or vegetable oil in a pot for frying.
Stretch pieces of dough by hand and fry in the hot oil until golden brown, about 2-3 minutes per side.
