Green Onion Kimchi

KoreanKRside
15 min
easy
4 servings
Servings4
2 bunches of green onion (1.7 kg trimmed)
1 cup (200 ml) anchovy or kanari fish sauce
250 g onion
250 g pear
30 g ginger
2 tablespoons shrimp paste
3 tablespoons anchovy sauce
2 tablespoons plum extract
200 ml water + 4 tablespoons sweet rice flour (for sweet rice paste)
1.5 cups red pepper powder
2 tablespoons white sugar
1

Rinse the green onions under cold water and trim the roots.

2

In a bowl, combine the Korean red pepper flakes, fish sauce, sugar, minced garlic, grated ginger, soy sauce, salt, and water to create the kimchi paste.

3

Mix the ingredients well until a smooth paste forms.

4

Add the green onions to the bowl with the kimchi paste and toss them until they are well coated.

5

Transfer the coated green onions to a clean glass jar, packing them tightly.

6

Seal the jar and let it sit at room temperature for 1-2 days to ferment, depending on your desired level of tanginess.

7

After fermentation, store the kimchi in the refrigerator to slow down the fermentation process.

8

Enjoy the green onion kimchi as a side dish or condiment.
