Traditionally, it is marinated in a blend of garlic, vinegar, and spices, then slow-cooked to tender perfection. Today, it is enjoyed not only in Guyana but also in Caribbean communities worldwide, showcasing the vibrant flavors of the region.

Peel and prepare 3-4 cloves of garlic.
Gather two types of thyme: fine leaf and broad leaf.
Prepare 2 sticks of cinnamon, 6-7 cloves, and some weary weary pepper (or cherry pepper).
Cut pork shoulder into desired portion sizes.
Pour 1 cup of vinegar into a bowl.
Mix 1 cup of water with the vinegar and pour it over the pork to clean it.
Mix the pork with the vinegar and water mixture using tongs or a spoon, ensuring all pieces are coated.
Let the pork sit in the vinegar mixture for 10-15 minutes while preparing other ingredients.
In a food processor or blender, add both types of thyme, garlic, and weary weary pepper and chop until combined.
Transfer the chopped mixture into a glass container.
Add the chopped ingredients to the container along with 2 sticks of cinnamon, 6-7 cloves, and 2 tablespoons of salt.
Pour in 2 and 3/4 cups of vinegar and mix everything together in the container.
Drain the pork from the vinegar mixture and add it to the seasoning mixture, ensuring all pork is coated.
Let the pork marinate in the mixture for 3 days, covered and stored in a cool place.
After 3 days, drain the fluids from the marinated pork.
Fry the pork on low heat until golden brown and cooked through.
