Prepare 2.5 pounds of beef by cutting it into pieces, leaving some bones attached.
Wash the meat thoroughly and drain it well.
Season the meat with 2 cloves of garlic, 1 tablespoon of adobo seasoning, and 0.5 tablespoon of complete seasoning. Do not add salt initially as the seasoning contains salt.
Cover the seasoned meat to let it marinate.
Heat a pressure cooker on the stove and add 0.5 teaspoon of sugar to caramelize slightly.
Add the seasoned meat to the pressure cooker and sauté until it gets color.
Check the meat as it cooks to ensure it is browning properly.
Once the meat is browned, add all the vegetables and ingredients to the pressure cooker.
Taste the mixture to check for salt, adjusting if necessary.
Add enough water to cover the meat and vegetables, then cover the pot and cook for 30 minutes on low heat.
When the pressure cooker starts to boil, lower the heat.
After 30 minutes, release the pressure and open the cooker to check the meat.
Let the meat reduce its liquid slightly after cooking until it is tender and has a good consistency without tomato sauce.
Serve the beef stew, suggesting it can be accompanied by white rice, fried plantains, or stewed beans.
