In Central Asia, samsa is commonly served during celebrations and gatherings, showcasing hospitality. Today, variations exist globally, with different fillings and cooking methods, making it a versatile dish loved by many.

Submerge almonds in boiling water for about one minute to remove the skin.
Drain the almonds and rinse with cold water to cool.
In a medium saucepan, combine 2.5 cups of sugar and 1 cup of water, stir to dissolve, and add juice of half a lemon.
Heat the syrup on medium-low for 15-20 minutes until reduced.
Preheat a skillet over medium heat and melt 1 tablespoon of unsalted butter.
Add almonds to the skillet and roast until golden brown, then remove.
Use the remaining butter to roast the hazelnuts until golden brown and crackling.
Let the roasted nuts cool down, then mix with 30 grams of confectioner sugar and 2.5 tablespoons of geranium water to form a paste.
Weigh 12 grams of the nut mixture to form small balls and cover with plastic wrap.
Cut strips of dough 4 cm wide and brush with melted butter.
Place a ball of filling on the dough strip and shape it into a triangle, folding the edges to seal.
Fry the samsa in vegetable oil over medium heat until golden brown, turning occasionally.
Once fried, dip the hot samsa into the room temperature syrup for 1-2 minutes.
Remove excess syrup and coat the samsa with crushed pistachio before serving.
