1 onion, chopped
1 tbsp coriander seeds, crushed
0.5 tbsp cumin seeds, crushed
0.5 tbsp red chili flakes

salt to taste

1 tsp garam masala
2 tbsp ginger-garlic paste
handful of coriander leaves, chopped
4 green chilies, chopped
1 tbsp tomato paste
2 tbsp olive oil
water (as needed)

Preheat the oven to 480°F.

In a large bowl, combine 2 lbs of minced beef, 1 chopped onion, 1 tbsp crushed coriander seeds, 0.5 tbsp crushed cumin seeds, 0.5 tbsp red chili flakes, 0.5 tbsp black pepper powder, and salt to taste.

Add 1 tsp turmeric powder, 1 tsp paprika powder, 1 tsp garam masala, 2 tbsp ginger-garlic paste, a handful of chopped coriander leaves, and 4 chopped green chilies to the meat mixture.

Mix all the ingredients together until well combined.

Add 1 tbsp tomato paste to the mixture and mix again until everything is well incorporated.

Cover the mixture and refrigerate for 2 hours.

Grease an oven-safe dish or a sheet pan.

Transfer the meat mixture to the greased dish or sheet pan and flatten it evenly.

Divide the flattened meat into 6 to 8 portions and mark impressions with a spatula.

Brush the top with oil.

Bake on the lowest oven rack at 480°F for 15 to 20 minutes.

After baking, brush the top with 1 tbsp of tomato paste mixed with 2 tbsp of olive oil and a little water to loosen it.

Broil on the top rack for 4 minutes until the kebabs are golden brown with slightly charred edges.

Remove from the oven and avoid overcooking to keep the kebabs juicy.
