Prepare the ingredients for the kebabs, including lamb mince, spices, garlic, green chilies, ginger, bell pepper, onions, fresh coriander, and fresh mint.

Measure out 4 teaspoons of garam masala, 1/2 teaspoon of chili powder, 2 teaspoons of ground coriander, 2 teaspoons of ground cumin, and 3 teaspoons of salt.

Place the garlic, green chilies, ginger, bell pepper, and onions into a blender and blend until smooth.

Add the lamb mince to a large bowl along with the blended vegetable mixture, spices, and chopped coriander and mint leaves.

While the kebabs are cooking, prepare the mint yogurt sauce by mixing 150 g of natural yogurt, a squeeze of lime juice, 1/2 teaspoon of castor sugar, 1/4 teaspoon of chili powder, 1/4 teaspoon of garam masala, and 2 1/2 teaspoons of jarred mint sauce in a bowl.
