Rinse the rice under cold water until the water runs clear.
Blend tomatoes, bell peppers, onions, garlic, and ginger into a smooth paste.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add the blended paste to the pot and cook for 10-15 minutes until thickened.
Stir in thyme, bay leaves, curry powder, salt, and pepper, cooking for another 5 minutes.
Add chicken stock and bring to a boil.
Stir in the rinsed rice and reduce heat to low, covering the pot.
Cook for 20-30 minutes until rice is tender and liquid is absorbed.
In the last 5 minutes, add green peas and diced carrots on top of the rice.
Remove from heat and let it sit covered for an additional 10 minutes.
Fluff the rice with a fork before serving.
