Nigerian Party Jollof Rice

It is often served at celebrations and gatherings, symbolizing unity and festivity. The dish has sparked a friendly rivalry among countries, each claiming to have the best version. Today, Nigerian Jollof is celebrated globally, known for its rich, smoky flavor and vibrant color, often accompanied by grilled meats or fried plantains.

Add vegetable oil to a large pot and heat it up.
Add chopped onion and scotch bonnet pepper to the pot.
Stir in curry powder and thyme to wake up the spices.
Add fresh basil leaves (if available) and onion powder, along with salt, and stir well.
Add tomato paste to the pot and fry for about 10 minutes, stirring continuously.
While the tomato paste is frying, boil chicken to make fresh stock.
Once the tomato paste is thick and oil floats on top, mix in the pepper sauce.
Adjust the seasoning to be slightly salty, as it will balance with the rice later.
Add a little water if the stock is not enough for cooking the rice.
Introduce the chicken stock into the mixture and stir well.
Add long-grain rice to the pot, ensuring it is well mixed with the sauce.
Cover the pot and let it cook for about 30 minutes without opening it.
After 30 minutes, stir the rice from the bottom to the top to mix the ingredients.
Poke holes in the rice with a fork or spoon to help achieve a smoky flavor.
Increase the heat for a short time to create a smoky effect on the rice.
Once done, let the rice cool slightly before serving.
