Originating from the Senegambian region, Jollof rice has become a staple across West Africa, particularly in Nigeria. It is often served at celebrations and gatherings, symbolizing unity and festivity. The dish has sparked a friendly rivalry among countries, each claiming to have the best version. Today, Nigerian Jollof is celebrated globally, known for its rich, smoky flavor and vibrant color, often accompanied by grilled meats or fried plantains.

Prepare ingredients: gather tomatoes, onions, Habanero peppers, garlic, and ginger.
Blend tomatoes, onions, Habanero peppers, garlic, and ginger without adding water.
Wash the rice until the water runs clear, using salt while washing.
Cook chicken wings and other chicken parts with chopped garlic, ginger, onions, seasoning cubes, curry powder, thyme, Rosemary, and water until well seasoned.
In a large pot, heat vegetable oil and add chopped onions and tomatoes to build flavor.
Remove cooked chicken and add blended tomato mixture to the pot, frying until oil separates from the tomato paste.
Add seasoning cubes, bay leaves, Rosemary, thyme, and salt to the stew base and let it cook for a few minutes.
Add the washed rice to the stew base, mix thoroughly, and add meat stock and just enough water to cover the rice slightly.
Cover and cook for about 25 minutes on low heat, adjusting seasoning as necessary.
Add sliced onions and tomatoes halfway through cooking, along with margarine for flavor and shine.
Once cooked, serve the rice with sides like plantain.
