1

Wash the rice by parboiling in boiling water for 2-3 minutes, then set aside.

2

Boil chicken breast seasoned with salt, mixed spice, curry powder, dried thyme, rosemary leaves, crushed ginger, crushed garlic, green chili, green bell pepper, and chopped onion until tender.

3

Separate the cooked chicken from the stock and fry the chicken until golden brown, reserving the oil.

4

In the same oil, add crushed garlic and ginger, mixed spices, curry powder, dried thyme, and dried rosemary leaves, frying for a few seconds.

5

Add chopped onion and fry until translucent, then add homemade tomato paste and fry until oil floats on top.

6

Add the reserved chicken stock and adjust salt, bringing it to a boil.

7

Add the washed rice, combining well, then add boiling water to the level of the rice.

8

Cover and cook until the water is absorbed, checking occasionally to prevent burning.

9

If desired, add butter and cover with foil to absorb into the rice.

10

Scoop out some rice and mix in chopped carrots, green bell pepper, and some reserved tomato paste, covering to simmer for 4-5 minutes.
