1

Season the chicken thigh with seasoning cubes, thyme, curry powder, fresh pepper, chopped onions, salt, and a little water. Mix and let it cook for 15 minutes on medium-low heat.

2

Fry the chicken in previously used oil with garlic for flavor.

3

Prepare the ingredients for the rice: wash 2 cups of rice, and gather chicken stock, onions, tomato paste, thyme, curry, and vegetable oil.

4

Blend fresh tomatoes, red bell pepper, garlic, ginger, and onions until smooth. Optionally, roast the vegetables before blending for added flavor.

5

Fry the blended mixture for 5-10 minutes until it thickens, then add bay leaves, curry, thyme, and salt.

6

Add the washed rice to the pot and mix with the sauce.

7

Pour in chicken stock, ensuring enough water is added to soften the rice.

8

Cover and let it cook until the water is mostly dried up, stirring occasionally.

9

Add diced carrots and additional onions, cover, and let it cook until properly dried and slightly burnt for smokiness.

10

Serve the jollof rice with fried chicken and optionally with fried plantain (dodo).
