Today, variations exist, with some opting for chicken or pork, making it a versatile and beloved staple in Filipino cuisine.

Marinate duck in soy sauce, vinegar, garlic, and black peppercorns for at least 30 minutes.
Heat cooking oil in a large pot over medium heat.
Sear the marinated duck until browned on all sides, about 5-7 minutes.
Remove duck and set aside; add onion to the pot and sauté until translucent, about 3-4 minutes.
Return the duck to the pot; add the marinade, bay leaves, and water.
Bring to a boil, then reduce heat to low and cover.
Simmer for 45 minutes, stirring occasionally, until duck is tender.
Add brown sugar and adjust seasoning with salt to taste.
If desired, add chili peppers for heat and simmer for an additional 10 minutes.
