Add 2 and 1/2 cups of flour to a pastry blender.

Add 2 teaspoons of granulated sugar and 1 teaspoon of salt to the flour.

Cut 226 g of chilled butter into cubes and add to the flour mixture.

Mix until the butter is in pea-sized pieces.

Measure 1/2 cup of water and add ice to chill it.

Add the chilled water 2 tablespoons at a time until the dough forms large clumps.

Dump the dough onto a lightly floured surface and fold it into itself until it forms a ball.

Cut the dough in half and flatten each half into a 1-inch thick disc.

Wrap each disc in Glad Wrap and refrigerate for 2 hours.

Peel and slice the apples using an apple peeler.

In a large bowl, combine the sliced apples with 1/2 cup of granulated sugar, 1/4 cup of all-purpose flour, 1 tbsp of lemon juice, 1/4 tsp of ground allspice, 1/4 tsp of nutmeg, and 1 and 1/2 tsp of cinnamon.

Mix until fully combined.

Transfer the apple mixture to a Dutch oven and cook in the oven for about 5 minutes until the apples are soft.

Roll out one disc of chilled pastry into a 12-inch diameter.

Place the rolled pastry into a pie dish and crimp the edges.

Poke holes in the bottom of the crust to prevent air bubbles.

Spoon the apple filling into the crust, packing it tightly.

Roll out the second disc of dough and cut it into 12 strips for a lattice top.

Arrange the strips in a lattice pattern over the apple filling.

Trim the edges and press them into the crust to seal.

Bake the pie in the oven for over an hour until golden brown.
