600 g bacalhau
4 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, chopped
1 bay leaf, halved
4 ripe tomatoes, peeled and seeded, diced
1/2 green bell pepper, sliced thin
125 ml white wine
1 tablespoon tomato paste
280 g rice
chopped parsley

Clean the bacalhau fillets of skin and bones and shred into flakes.

In a large pot, heat the olive oil.

Add the chopped onion, bay leaf, and chopped garlic, and sauté without letting them brown.

Add the diced tomatoes and sauté until they start to break down.

Add the washed and drained rice, tomato paste, and white wine, and season with salt and pepper, keeping in mind the bacalhau is already salty.

Stir and cook for a bit until the rice becomes translucent.

Add 600 ml of water and bring to a boil.

Once boiling, add the bacalhau and sliced green pepper, mix everything, and let cook for 10 minutes until the rice is creamy, adding more water if necessary.

After the rice is cooked, turn off the heat, mix in the chopped parsley, and serve.
