2 codfish loins or 2 soaked codfish steaks, approximately 600g
4 tablespoons of olive oil
1 large chopped onion
2 cloves of minced garlic
1 bay leaf, cut in half
4 ripe tomatoes, peeled and diced, without seeds
Half a green or red bell pepper, cut into strips
125ml of white wine
1 heaping tablespoon of tomato paste
280g of rice
Chopped parsley
Salt
Pepper

Remove the codfish loins from any skin and bones.

Shred the codfish into flakes.

In a large pot, heat the olive oil.

Add the onion, bay leaf, and garlic. Stir and sauté briefly without letting it brown.

Add the tomatoes and sauté until they begin to break down.

Add the washed and drained rice and stir.

Add the tomato paste and white wine.

Season with salt and pepper, considering that the codfish is already salty.

Stir and let it cook a bit until the rice becomes translucent.

Add 800ml of water and let it boil.

If desired, boil the water previously with the codfish skin and bones for added flavor.

Once it starts boiling, add the codfish and strips of bell pepper.

Mix everything and let it cook for 10 minutes.

If you want the rice to be a bit creamy, add more water if needed.

After the rice is cooked, turn off the heat.

Add the parsley, cover, and let it rest for a few seconds.
