Add warmed milk and instant yeast into your mixer and mix well; let sit for 5-10 minutes.

Add sourdough starter, salt, egg, maple syrup, and flour to the mixer.

With the dough hook attachment, turn on low speed and slowly pour in melted butter; mix for about 5 minutes or until the dough is smooth and pulls away from the sides of the mixer.

Place the dough in a bowl and cover until doubled in size (about 1-2 hours, or 8 hours if yeast is omitted).

Take the dough out of the bowl and place it onto a floured surface; cut into little dough balls (40g for smaller sausages and 80g for full length).

Add sausage, jalapeños, and pepper jack cheese to the dough balls.

Wrap the dough around the sausage and roll between your hands to smooth out.

Place dough on a parchment paper lined cookie sheet, cover with a towel, and let rise again for 1-2 hours.

Preheat oven to 350 degrees and bake for 30-35 minutes.
