Mix 2/3 cup of warm evaporated milk with 1/4 teaspoon of sugar until dissolved.
Add 1 1/4 teaspoons of dry active yeast to the milk mixture and let it sit for 7 to 10 minutes until foamy.
In a separate bowl, sift together 1 2/3 cups of all-purpose flour and 1/3 cup of potato flour.
Add 2 tablespoons of sugar and 1/2 teaspoon of salt to the flour mixture and mix well.
Add 2 tablespoons of melted butter, 1 large room temperature egg, and the yeast milk mixture to the dry ingredients; mix until combined.
Knead the dough for about 5 minutes until it comes together; it will be sticky.
Cover the dough and let it rise in a warm place until doubled in size.
Flour the work surface and knead the dough for another 5 minutes, adding oil instead of flour to keep it moist.
Let the dough rest for a second time until it doubles in size again, about 1 hour.
Turn the risen dough onto a floured surface and divide it in half; reserve one half for another recipe.
Roll out the dough and cut it into pieces; place two little Smokies in the center of each piece.
Pinch the dough closed around the filling and shape into kolaches.
Cover the kolaches with cling wrap and a towel; let them rest for 35 to 40 minutes.
Preheat the oven to 350°F.
Brush the kolaches with melted butter before baking.
Bake the kolaches for 17 minutes until golden brown.
