Mix all-purpose flour, sugar, salt, and yeast in a bowl until combined.
In a separate measuring cup, combine 2 eggs, 3 egg yolks, melted butter, whole milk, and lemon zest. Whisk together.
Drizzle wet ingredients into the dry ingredients while mixing on low speed until combined.
Increase mixer speed to medium-high and mix for 8-10 minutes until dough is shiny and pulls away from the bowl.
Cover the dough and let it sit at room temperature for 45 minutes, then refrigerate overnight.
Divide the dough into 12 pieces, each about 2.25 to 2.5 ounces, and roll into balls.
Place dough balls seam side down on a baking sheet, three across and four down.
Cover with plastic wrap sprayed with cooking spray and let rise for 1 to 1.5 hours until puffy.
Prepare the cream cheese filling by mixing 8 ounces of cream cheese, powdered sugar, 2 teaspoons lemon zest, and 2 teaspoons lemon juice until combined. Refrigerate.
Make a crumble topping by mixing a small amount of flour, butter, and sugar until clumpy, then refrigerate.
Prepare egg wash by whisking 1 egg with a little water.
Once dough has risen, create an indentation in the center of each ball with fingers, then brush the edges with egg wash.
Fill each indentation with a heaping tablespoon of cream cheese filling, then add jam of choice (cherry, apricot, blueberry) on top.
Sprinkle crumble topping around the edges of the kolaches.
