Melt the butter, steam the milk, and bloom the yeast simultaneously.
Microwave the butter or place it on the exhaust vent of the oven.
Heat the milk on medium until it steams but does not boil; let cool for 15 minutes.
Bloom the yeast in water under 115°F.
In a bowl, combine 2/3 cup sugar, 1 large egg, and 3/4 teaspoon salt.
Add 1/2 stick of melted butter and mix well.
Stir in the bloomed yeast and steamed milk, then add flour gradually (550 g all-purpose and 100 g cake flour).
Mix until just combined, creating a shaggy blob, not a dough ball.
Place the mixture in an oiled bowl, cover, and let rise for about 90 minutes until doubled in size.
Punch down the dough to release air and place it in the fridge for at least 4 hours or overnight.
Prepare the blueberry filling by cooking 1 cup blueberries, 1 tablespoon sugar, 1 teaspoon water, and 3/4 teaspoon cornstarch on medium heat for about 5 minutes.
For the cream cheese filling, whip together 8 oz softened cream cheese, 1/2 cup granulated sugar, 1/2 teaspoon vanilla extract, and 1 egg yolk until fluffy.
Weigh out the dough into 75 g balls or shape them into golf ball sizes.
Shape the balls until smooth and place them on a greased pan.
