1

Wash the oxtail thoroughly and remove excess fat.

2

Mix Cajun seasoning, black pepper, onion powder, and other seasonings in a bowl.

3

Add green seasoning and pimento seeds to the oxtail.

4

Add a packet of Sazon seasoning and half a teaspoon of Adobo seasoning.

5

Sprinkle chili powder and garlic powder over the oxtail.

6

Pour in dark soy sauce and Worcestershire sauce, avoiding additional salt due to the soy sauce's sodium content.

7

Add half a teaspoon of brown sugar and browning sauce gradually to achieve desired color.

8

Mix in one tablespoon of tomato ketchup for flavor.

9

Marinate the oxtail overnight.

10

Heat a tablespoon of oil in a large pot and sear the oxtail in batches for about 5 minutes on each side until browned.

11

Add a little water to deglaze the pot, scraping up any browned bits.

12

Cover the oxtail with enough water and cook on the stovetop for about 30 minutes on low heat, turning the pieces occasionally.

13

Transfer the oxtail to a pressure cooker, adding the remaining liquid from the pot.

14

Add more hot water to cover the oxtail, ensuring not to overfill the pressure cooker.

15

Cook under pressure for about 30 minutes.

16

Remove excess grease from the oxtail after cooking.

17

Add two more tablespoons of tomato ketchup and fresh seasonings like ginger, sweet pepper, onion, and scallion.

18

Optionally add red wine vinegar for flavor.
