1 cup coconut milk
3/4 cup sugar
2 tablespoons cornstarch
1 tablespoon vanilla extract
1/2 teaspoon nutmeg
1 tablespoon lemon zest
1 teaspoon cinnamon
1/4 cup maple syrup
1/2 cup tofu
1 cup plant-based milk
1 cup flour
1/4 teaspoon salt

Preheat the oven to 200°C (400°F).

Roll out the puff pastry on a lightly floured surface.

Cut the pastry into circles and line muffin tins with them.

Blend the tofu, coconut milk, sugar, cornstarch, vanilla extract, nutmeg, lemon zest, and cinnamon until smooth.

Pour the filling into the pastry-lined muffin tins until nearly full.
