Start with garbanzo bean flour in a bowl.
Add oat flour to the bowl.
Mix in a little bit of granulated sugar.
Add baking soda and salt, then stir to combine the dry ingredients.
Pour in non-dairy milk directly into the dry ingredients without mixing separately.
Add vanilla extract to the mixture.
Incorporate unsweetened applesauce to replace oil and add fluffiness, then stir until well combined.
Heat a skillet over medium heat until piping hot.
Lightly coat the skillet with oil for texture, but it's optional if using a nonstick pan.
Pour batter onto the skillet to form 3 to 4-inch pancakes.
Add 8 to 10 blueberries on the surface of each pancake instead of mixing them into the batter.
Look for the edges of the pancakes to become more matte than shiny to know when to flip, as bubbles won't form like traditional pancakes.
Use a thin metal spatula to flip the pancakes carefully.
Cook the pancakes for a few more minutes after flipping until done.
Serve pancakes warm with extra blueberries and maple syrup on top.
