Garlic Knots

Cultural Context

Garlic knots originated in Italian-American communities, particularly in New York City, as a way to use leftover pizza dough. These delightful bites are often served as a side dish in pizzerias and Italian restaurants, celebrating the flavors of garlic and herbs. Today, garlic knots have gained popularity beyond Italian cuisine, appearing on menus worldwide as a beloved snack or appetizer.

1

In the bowl of a standing mixer, add 3 cups of all-purpose flour, 2 teaspoons of kosher salt, 2 teaspoons of sugar, and 2 teaspoons of instant yeast.

2

Add 1 and 1/4 cups of warm water and a drizzle of olive oil to the dry ingredients.

3

Attach the dough hook and mix on medium speed for about 3 minutes until the dough comes together, slightly tacky but not sticky.

4

Place the dough in an oiled bowl, cover it, and let it rise until doubled in size, or overnight in the fridge.

5

Flour your surface and dump the risen dough onto it.

6

Cut the dough into strips using a pizza cutter.

7

Take each strip, stretch it slightly, and wrap it around your fingers three times to form a knot.

8

Place the formed knots on a baking sheet lined with parchment paper and cover loosely with a kitchen towel.

9

Let the knots rest in a warm place for about 45 minutes until they puff up.

10

Preheat the oven to 425°F (218°C).

11

Bake the knots in the preheated oven for 15-20 minutes until golden brown.

12

While the knots are baking, prepare the garlic parmesan oil by chopping garlic and parsley finely.

13

Grate parmesan cheese and combine it with the chopped garlic, parsley, a pinch of salt, and a pinch of red pepper flakes in a bowl.

14

Add about 1/4 cup of olive oil to the mixture and stir to combine.

15

Once the knots are out of the oven, toss them in the garlic parmesan oil while they are still hot.
