Mix 7 g dry yeast with 250 ml warm water and 1 teaspoon sugar and 3 tablespoons wheat flour. Cover and set aside for 15 minutes.

Add 450 g wheat flour type '00' and salt to the yeast mixture. Knead the dough for 10 minutes.

Add 5 tablespoons olive oil to the dough and brush it so it doesn't stick to the bowl. Cover and leave for 2 hours to rise.

Rub your hands with olive oil to prevent the dough from sticking. Divide the dough into small balls (22 total).

Roll each ball into a long rope and tie a knot with it.

Cover the knots and leave to rise for 30 minutes.

Grate 25 g of Parmesan cheese and chop parsley. Mince 7 cloves of garlic and mix with 1 teaspoon Italian herbs and 150 ml olive oil. Fry the garlic mixture for about 2 minutes.

Bake the knots at 250°C (482°F) for 15-20 minutes until golden brown.

Drizzle the hot knots with the garlic and olive oil mixture, sprinkle with parsley, Parmesan, and black pepper. You can add a little more olive oil if desired.
