1

Welcome viewers and introduce the recipe for sweet rice (Zarda).

2

Take 1/2 cup of basmati rice and wash it thoroughly in 2-3 changes of water.

3

Add 1 cup of water to the washed rice and cover it to soak for 30 minutes.

4

In a kadhai, melt 2 tablespoons of ghee over medium heat.

5

Add 2 cashews (cut in half) and 2 almonds (cut in half) to the ghee and roast them.

6

Add raisins and chopped dried coconut to the kadhai and roast all the dry fruits together.

7

After roasting, remove the dry fruits from the kadhai and set them aside.

8

Check the soaked rice after 15-20 minutes; it should be ready to cook.

9

Add 2 more tablespoons of ghee to the kadhai and add crushed cardamom.

10

Add the soaked rice to the kadhai and mix it well with the ghee and cardamom.

11

Add saffron to the rice; it can be soaked in milk beforehand for better color.

12

Add an equal amount of water to the rice (1/2 cup) and stir gently.

13

Cover the kadhai and cook the rice, checking occasionally to ensure it doesn't burn.

14

After about 10 minutes, check the rice; it should be almost cooked with some water remaining.

15

Add sugar to taste and mix it into the rice, covering it again for another 4-5 minutes to let the sugar dissolve and rice finish cooking.

16

Add the roasted dry fruits back into the rice and mix gently.

17

Optionally, add cherries or any other preferred dried fruit and mix well.

18

Plate the sweet rice and show the final presentation.
