fish sauce

๐Ÿฅ—Healthier: soy sauce

๐Ÿ’ฐCheaper: salt + water

Soy sauce is a vegetarian alternative, while salt and water can mimic the briny flavor.

Korean red pepper flakes

๐Ÿฅ—Healthier: smoked paprika

๐Ÿ’ฐCheaper: regular chili powder

Smoked paprika adds flavor without the heat, while chili powder is more accessible.

1

Cut the Napa cabbage and let it sit for 30 minutes until it shrinks and becomes bendable without breaking.

2

Rinse the cabbage 2-3 times to remove excess salt and squeeze out the water.

3

In a bowl, mix together Korean red chili flakes, plenty of garlic, plum extract, fish sauce, a touch of sugar, and shrimp paste to create the kimchi paste.

4

Add in fresh chives and green onion to the paste.

5

Gently massage the paste into the Napa cabbage until well coated.

6

Set the kimchi aside as you prepare the pork belly.

7

Slow cook the pork belly over onions, apple, bay leaves, black pepper, and garlic until tender.

8

Remove the pork belly and aromatics from the pot.

9

Using the leftover cooking liquid, add soy sauce and honey, then mix well.

10

Return the pork belly to the pot and cook on medium low heat until it absorbs the flavor and the sauce reduces.
