Soak the maize in water for about 2 to 3 days.

Mill the soaked maize into a paste.

Stack the paste to cook with water, stirring it into a dough-like consistency, but do not allow it to cook fully like banku.

Transfer the dough into a larger pan, mixing it with an equal quantity of fermented corn.

Prepare two types of kenkey: gun kenkey packed in corn husks and fancy kenkey packed in dried banana leaves.

Lay the pan with the appropriate leaves (corn husks for gun kenkey, banana leaves for fancy kenkey).

Add a little water to the pan and cover it with rubber to allow the steam to cook the kenkey.

Boil the kenkey for about 2 to 3 hours on medium heat.
