Today, variations of Puff Puff can be found in many West African countries, showcasing local flavors and ingredients.

Start by measuring 3 cups of all-purpose flour into a large bowl.
Grate 1 cup of fresh carrots and blend them with a little water until smooth, adding more water if necessary to achieve a paste-like consistency.
Add 1 teaspoon of orange zest to the blended carrot mixture and set it aside.
In the bowl with the flour, add 1/2 cup of sugar, 1 teaspoon of salt, and 15 grams of baking powder.
Mix the dry ingredients together before adding the carrot mixture.
Gradually add warm water to the mixture until it reaches a smooth, not too runny consistency, mixing well.
Switch to a spatula and continue mixing, adding more warm water if needed until the batter is well combined and has the right texture.
Cover the bowl with transparent wrap and a kitchen towel, letting it sit for 45 minutes to 1 hour to rise until doubled in size.
After the dough has risen, use a spatula to gently deflate the batter to avoid making it too fluffy.
Heat vegetable oil in a deep pan over medium heat until hot.
Use an ice cream scoop to drop portions of the batter into the hot oil, noting that the color will be a yellowish-brown due to the carrots.
Fry the puff puff for about 3 minutes, flipping them with a skewer stick until they are perfectly brown.
Once cooked, scoop the puff puff onto kitchen paper to absorb excess oil and continue frying until all the batter is used up.
