Marinate the pork belly with onion, garlic, sugar, seasoning powder, fish sauce, chili powder, and turmeric powder for 1 hour.

Boil 6 eggs.

Fry the pork fat in a pan for 20 minutes, then remove and add a little salt.

In a pot, heat 1 tablespoon of oil, add the marinated pork belly and stir-fry. Then add dried shrimp and 3 tomatoes, stir-fry together.

Pour in 1 can of coconut soda (or fresh coconut water), then add 2 liters of water, seasoning powder, and fish sauce. Bring to a boil for 2 hours.

After boiling, add scallops, squid, and shrimp, bring to a boil again, then turn off the heat. Adjust the broth to taste if necessary.

Serve the Mi Quang noodles in a bowl, top with stir-fried shrimp, boiled eggs, broth, fried shallots, peanuts, fresh herbs, and grilled rice paper.
