In a bowl, combine plain flour, lard, and butter; rub together to create breadcrumbs.
Add a little water to form a smooth dough ball; adjust water as needed if too crumbly or sticky.
Wrap the dough in cling film and chill in the fridge.
Chop onion and heat cooking oil in a pan; sauté the onion until translucent.
Crush garlic and add it to the pan with the sautéed onion.
Add beef mince to the pan and cook until it changes color from red to gray.
Season with salt, black pepper, and fresh thyme leaves; stir well.
Add tomato paste to the mixture and stir until incorporated.
Finely chop scotch bonnet and spring onion; add them to the pan and mix well.
Remove the filling from heat and set aside to cool.
Roll out the chilled pastry to about 1 centimeter thick.
Use a pastry cutter or cup to cut out circles from the pastry.
Place a pastry circle on an oiled baking tray and add a little filling to the center.
Brush the edges of the pastry with water and place another circle on top; press down to seal.
Use a fork to crimp the edges for a decorative pattern and to ensure they are sealed properly.
Poke a hole in the top of each pastry to allow steam to escape while baking.
Whisk an egg and brush it over the pastries for an egg wash.
Bake in the oven at 180°C for about 45 minutes until golden brown.
