Roll the veal tightly, starting from the thinnest end.

Secure the rolled veal with toothpicks, stitching through each end to hold it in place.

Prepare a pie plate with one beaten egg and another plate with sourdough breadcrumbs.

Grate parmesan cheese into the breadcrumbs and mix in fresh herbs.

Coat the rolled veal in the beaten egg, ensuring it's covered all around.

Roll the veal in the breadcrumb mixture, pressing to adhere the breadcrumbs well, including the ends.
