Heat olive oil in a skillet over medium-high heat.

Sear the beef roast on all sides until browned, about 4-5 minutes per side.

Transfer the beef roast to the crockpot.

Add beef broth to the crockpot.

Sprinkle Italian seasoning, salt, and black pepper over the beef.

Add minced garlic and sliced onion on top of the beef.

Layer sliced green and red bell peppers over the beef.

Add banana peppers and giardiniera to the crockpot.

Cover and cook on low for 8-10 hours or until the beef is tender and shreds easily.

Remove the beef from the crockpot and shred with two forks.

Return the shredded beef to the crockpot and stir to combine with the juices.

Serve on buns and top with provolone cheese.
