Heat olive oil in a skillet over medium heat.
Add chopped onion to the skillet and sauté until softened.
Add 2 pounds of ground beef to the skillet and cook until browned, adding salt and pepper to taste.
Drain excess grease from the cooked ground beef.
Let the beef cool down before mixing with cheese to avoid melting the cheese.
In a bowl, combine cooked ground beef, sautéed onions, parsley, eggs, Parmesan cheese, salt, and pepper. Mix until well combined.
Cook cannelloni shells in boiling water for about 7-8 minutes until firm but not fully cooked.
Drain the cannelloni shells and let them cool to handle easily.
Prepare a makeshift pastry bag by cutting an inch off the corner of a freezer bag to fill the cannelloni shells.
Spread about 3 ladles of tomato sauce on the bottom of a baking dish.
Fill each cannelloni shell with the beef mixture using the pastry bag, squeezing until filled.
Arrange the filled cannelloni in the baking dish and cover with more tomato sauce.
Preheat the oven to 450°F (232°C).
Bake the filled cannelloni in the oven for about 30-40 minutes.
Check for doneness and let them bake for an additional 5-10 minutes if needed.
Remove from the oven and top with more cheese and parsley before serving.
