Dum Pukht

Originating from the royal kitchens of Awadh in India, Dum Pukht is a slow-cooked dish that embodies the essence of Mughlai cuisine. Traditionally prepared in sealed pots, the cooking technique allows the flavors to develop richly, making it a festive dish often served during special occasions. Today, Dum Pukht has transcended its royal roots and is enjoyed in various forms across the Indian subcontinent and beyond, with each region adding its unique twist.

Marinate meat with yogurt, garlic, ginger, spices, and salt for at least 2 hours.
Soak rice in water for 30 minutes, then drain.
Heat ghee in a heavy pot over medium heat until melted.
Fry sliced onions in ghee until golden brown, about 5-7 minutes.
Add marinated meat to the pot and cook until browned, about 10 minutes.
Layer soaked rice over the meat evenly in the pot.
Add water, saffron, and whole spices; stir gently to combine.
Cover the pot tightly with a lid to trap steam.
Reduce heat to low and cook for 45-60 minutes, allowing flavors to meld and rice to cook.
Remove from heat and let it rest for 10 minutes before serving.
Garnish with chopped cilantro, mint, and fried onions before serving.
