1 teaspoon juniper berries

Cut the pork shoulder and pork back fat into strips.

Combine all the spices and grated garlic with the meat and mix it well.

Place the mixture in the freezer for around 1 to 2 hours for grinding.

Using a meat grinder with the coarsest plate, grind the meat mixture.

Add white wine to the ground meat and mix well for a few minutes until it binds nicely into one piece.
