Cut almond paste into small pieces and place them in a food processor, pulse until crumbly.

Add sugar and salt and pulse until mixture resembles a coarse crumb.

Add 1/2~2/3 egg white and continue processing until the dough comes together. If the dough is a little dry, add the remaining egg white. The dough will be thick and slightly sticky but shouldn't be running, you'll be able to roll it into balls between your hands.

Line a baking sheet with parchment paper.

Scoop up the dough and roll into a ball, about 19~20g each.

Roll the dough ball in pine nuts and toss well to coat. Then place balls onto a baking sheet.

Preheat the oven to 170C, bake for 20-22 minutes or until the nuts and surface of cookies are just starting to turn light golden, don't over bake.

Once baked, let cookies stay on the tray briefly for about 5 minutes, then dust with powdered sugar and transfer to a wire rack to cool.
