12 ounces almond paste
4 large egg whites
1/2 cup granulated sugar
1 cup powdered sugar
1 1/2 cups pine nuts
1

Preheat the oven to 325 degrees.

2

In a food processor, add 1/2 cup of granulated sugar and 12 ounces of almond paste. Process for about 30 seconds until it reaches a sand-like consistency.

3

Add 2 egg whites to the food processor and mix thoroughly to create a light and fluffy consistency, resembling gelato, for about 30 seconds.

4

Add 1 cup of powdered sugar to the mixture and process for about 10 seconds to incorporate without overbeating.

5

Crack the remaining 2 egg whites into a bowl.

6

Prepare a bowl half full of pine nuts and a little flour for your hands.

7

Using a scooper, form the mixture into 1-inch balls, roll them in the egg whites to create a crust, and then roll them in the pine nuts.

8

Place the cookie balls on a baking sheet and flatten them slightly with the bottom of a cup.

9

Bake in the preheated oven for 12 to 15 minutes until lightly browned.
