Roasted Red Pepper White Bean Hummus

1 medium red bell pepper (capsicum)
2 cups cooked chickpeas
¼ cup olive oil
3-4 garlic cloves
Salt to taste
2 tbsps tahini
Red chilli flakes for garnish
Grilled pita to serve

Brush butter on the red bell pepper.

Roast the bell pepper until it is done from all sides.

Place the roasted pepper in a bowl of water and peel the skin. Roughly chop the pepper.

In a food processor, combine the chickpeas, garlic, salt, olive oil, chopped red bell pepper, and tahini. Blend until smooth, scraping the sides occasionally.

Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with red chilli flakes. Serve with grilled pita.
