Roasted Red Pepper White Bean Hummus

1 cup chickpeas, rinsed and drained
2 roasted red peppers from a jar
2 tablespoons tahini paste
1 lemon, juiced
2 cloves garlic, roughly chopped
salt, to taste
pepper, to taste
handful of parsley, torn
extra virgin olive oil, for drizzling
French bread, sliced thin for crostini

Start by rinsing and draining 1 cup of chickpeas.

Take 2 roasted red peppers from a jar.

Measure out about 2 tablespoons of tahini paste.

Juice 1 lemon and add the juice to the mixture.

Add 2 cloves of roughly chopped garlic to the food processor.

Add a few pinches of salt and a little more pepper to taste.

Tear a handful of parsley and add it to the food processor.

Put the lid on the food processor and blend the mixture while drizzling in some extra virgin olive oil.

Prepare the crostini by slicing French bread thinly and broiling it in the oven until brown, drizzled with olive oil beforehand.

Top the crostini with the roasted red pepper hummus and chopped roasted red peppers.
