Tandoori Samosa

The tandoori version adds a smoky flavor by cooking in a tandoor, a clay oven, giving them a unique twist. Prepare the dough by mixing all-purpose flour, salt, and oil in a bowl.
Gradually add water and knead until smooth; let it rest for 30 minutes.
Boil potatoes until tender, then mash them in a bowl.
Add peas, cumin seeds, coriander powder, garam masala, green chilies, ginger, and salt to the mashed potatoes; mix well.
Divide the dough into small balls and roll each into a thin circle.
Cut each circle in half to form two semi-circles.
Take one semi-circle, fold it into a cone, and seal the edge with water.
Fill the cone with the potato mixture and seal the top, ensuring no filling escapes.
Preheat the tandoor or oven to a high temperature.
Brush the samosas with oil and place them in the tandoor or on a baking sheet.
Bake or cook until golden brown, about 15-20 minutes.
Serve hot with chutney or yogurt dip.
