Fry 1 leek in olive oil over medium heat.

Add 1 red bell pepper and 1 yellow bell pepper to the skillet.

Add 1 zucchini and season with salt and black pepper.

Add Italian herbs and stir well.

Fry the vegetables for 5-7 minutes.

Add 2 minced garlic cloves and green onions, stir and cook for another 3 minutes.

Crack 4 eggs and pour them into the vegetable mixture.

Add 100 g cheese and cook in the oven for 15 minutes at 180° C (350° F).

Prepare 2 zucchini by grating them with a special grater and salting them, leaving for 10 minutes to remove excess moisture.

Roll the grated zucchini in 150 g flour.

Crack 2 eggs, season with salt and black pepper, and mix well.

Dip the zucchini in the egg mixture, then in breadcrumbs.
